Alice McGrath’s Gingered Beef Stir Fry
Alice McGrath’s Gingered Beef Stir Fry: ‘I have a fabulous recipe for a ginger-y beef stir fry, which I tried a couple of times over the years, but it was always very difficult to get it right – the beef would often turn out tough. But with the piemontese steak strips, the recipe works really well.’
Ingredents
- 500g Irish Piemontese Steak strips
- 1tbs cornflour
- 3tbs oil
- approx 1 inch piece root ginger, peeled and finely chopped
- 3 spring onions
- 3 tbs soy sauce
- 2 tbs dry sherry
- 1 tsp sugar
- 1tsp cornflour
- 2 tbs water
- black pepper
Method
- Sprinkle the steak with the tablespoon of cornflour, 1 tbsp oil and toss lightly. Clean the spring onions and chop into 2cm pieces. In a wok or large pan, heat the remaining 2 tbsp oil until very hot. Add the steak and ginger and fry over high heat stirring vigorously for approx 1 1/2 minutes. Add spring onions and continue to stirfry for one minute.
- Stir in the soy sauce, dry sherry, sugar and the teaspoon of cornflour dissolved in the 2 tbsp of water. Continue to stir until sauce bubbles. Season with pepper and serve immediately with boiled rice & salad.
